Writing about the glories of 2nd day soup got me thinking about Jacques Pepin's famous chocolate chip cookie recipe.
Three things about that decadent recipe stand out in my memory: use the best ingredients - top grade butter & chocolate, TWO flours; let the dough set for at least 24 hours, preferably longer; and a scattering of sea salt on the top takes it to indescribable heights of glory.
What's true for Jacques' chocolate chipper is true of life. Seek out & use the best of what's available. Time is our ally, lending greater texture & flavor. And a few kicks of the right seasoning can take us to unexpected heights.
