Earlier today, Carolyn Simons Soneson & I commiserated over less-than-marvelous tomatoes. Disappointing doesn't begin to touch our dismay. But we both lit up talking about roasting even some sorry excuses for the beloved veggie. Amazing, how roasting draws out the sugars & the flavors.
Getting up there significantly in years can sometimes feel like turning into an out-of-season tomato, nurtured in a green house, under artificial lights. But add heat - engaging activities, people you genuinely care about, interesting conversations that perk up the mind & engage the spirit - then season well & unimagined flavors abound.
