Ulla's Mac & Cheese
What a special experience, crafting food for the gathering after the "official" screening of my sister, Mim's, online memorial tribute. Mim slipped from us early in July, but the months since have been spent lovingly putting together a very "her" memorial. For me, it's important that the food be as representative of her as the video.
Last night, I experimented with making mac & cheese the way Mim learned from Ulla, a fabulous cook who worked for Lach & Jean Pitcairn. Her secret was to add an extra cup of cheese sauce, then cook the casserole low & slow, like great barbeque. Baked last night's for an hour at 300F - perfect. Paired with my own recipe - 2/3 extra sharp cheddar to 1/3 Trader Joe's Unexpected Cheddar - it was every bit as decadent as Mim would have loved!
For the gathering, will triple a regular batch & serve it at room temp. Should be beyond yum, just like Mim would have made!
